The particular geographical position and conformation of Sicily create unique microclimates, thanks to which the agricultural products acquire organoleptic and health properties recognized as unique in the world. These products, for example, have great anti-aging and purifying properties. Just to give one example, the antioxidants, which are responsible for the characteristic color of pistachios, fight free radicals, that cause aging: beta-carotene, lutein and zeaxanthin are the sources of yellow and green colors; the anthocyanins provide instead the typical reddish color, while the polyphenols and catechins have shades of yellow or white.
